Mini Victoria Sponges



 Ingredients:
100g Self-raising Flour
100g Butter
100g Caster Sugar
1tsp Baking Powder
2 Eggs
Jam

1. Pre-heat the oven to 200°C and grease a 12 hole muffin tin. 

2. Mix all the ingredients in a bowl except for the jam.

3. Spoon the mixture into each of the 12 holes in the muffin tin.

4. Bake for 10 minutes or until brown then leave to cool on a rack.

5. Carefully remove them from the tin and cut each one in half horizontally. Spread some jam on the bottom half then put the top on and sprinkle some icing sugar.
